We are going to Amsterdam for a weekend in early Feb.
Being a big canal area, can anyone recommend places to visit with a water/canal/boating interest.

I know Amsterdam fairly well. There's over 30 miles of canals in Amsterdam.

As you walk out of Central Station there are canal trips right in front of you. Walk down a little further to Damrak and there are even more trips on your left-hand side; further down to Rokin and there's even more. There are plenty of options for boating; in person with the boat, at tourist outlets or online. There's wine and dine, museum trips, round-trips, all sorts of things. There are also boats for rent for DIY trips.

..if you're lucky, the canals will still be frozen and you'll be able to hire out some blades and discover the canals for yourself.... Did it once about 10 years ago. And they had markets on the ice... completely novel for me...

Head towards Jordaan.
When you exit Central Station it's over towards the right.
There are some lovely houseboats over there and beautiful walks and markets.
